OBS. Depending on the game, I record the game's own desktop mirror, the steamVR mirror, or the oculus mirror. You can use OVRDrop with the obs to start/stop recording a little easier from in-game, or you can use input emulator to bind controller buttons to a keyboard shortcut (and OBS keyboard shortcut to start/stop). Or just squint at your monitor through the nose hole and hit buttons on your keyboard.

I haven't tried it yet, but OBS also has an instant reply buffer. Would be useful for clipping highlights if it works.
