Skyrim VR will generally get you the most bang for your buck, as it's the VR game I've easily spent the most time on.
Boneworks is overall a better "VR game" and isn't *that* short, but still fairly short and feels a little like a tech demo.
Half-Life Alyx is also good, it's a full-length game but it very much caters to VR newcomers.

Ambient is not real-time necessarily. It's an inherent part of the scene lighting settings. It's the environment lighting that affects dynamic objects only that is part of the scene. Thinking crank it very very slightly from default 1 to 1.2 just for a very minor tweak. It's already ok as is but a minor change won't hurt

Serious question, do you not know how light probes work?
Light probes don't cause any lag, they're basically always accounted for in the shader even if you don't have any, because they're so cheap. It's literally one of the cheapest things you can do in Unity, both in terms of memory and CPU.

The real thing you have to look out for in terms of ambient lighting is having Realtime GI enabled (which you actually might have enabled, considering it's you we're talking about).
Light probes are literally free, please use them.
