I don't know, but getting a GT Omega Apex stand, a T300 RS GT wheel, and a SHH shifter is a good purchase for simracing in my opinion. You need at least a decent sequential wheel like the T150/TMX pro if you don't wanna spend more money.

As far as racing sims go: the faster you go, the worse it gets. On low speeds, gamepad is all fine, on high speeds you really, really miss the precision of a wheel. It's not impossible to enjoy game on gamepad, so feel free to try, but it's much, much better on a wheel. So, if you're interested enough and you have this $50 to spare, you can get a logitech DFGT and enjoy the cheapest "real wheel" experience (or aim higher and get better results!). If you feel like it's too much commitment for now, then yes, racing sims can be done on gamepad, worth a shot.

Also, one racing game i can definitely recommend for gamepad is Dirt Rally. It plays extremely well on gamepad, to the point where you wonder if it's even worth it to play it on a wheel when you can be comfy with a pad instead. It's also sim-ish enough to feel like a proper racing vidya, and has a surprisingly fun career mode despite being as basic as it gets.

I always have to get used to a new games turning and movement speed, playing a little longer each time. I have never got used to things like flying though, that still makes me ill. Some people say standing up is better than sitting down if you get motion sickness. You could also try ginger tablets 30 min before playing too. and for me personally, having my room a little bit cool helps a lot.

Technically the original Oculus Rift didn't come with VR motion controllers, the touch controllers were around 6 months later. At release the Oculus Rift sold with an xbox gamepad. If you look for early vr games from late 2016/early 2017 you should find plenty with game controller/kb+mouse support. Even vrchat supports headset+xbox controller if you wanna look like a half-desktopper.

I don't know if the heart rate monitor will help outside of fitness crap, but the face muscle tracking and eye tracking would be excellent if VRChat or Neos could support them. Tragically, from what I understand, it doesn't use tobii eye tracking so games that already support eye tracking might not work with the G2's eye tracking module. I kind of hope that there will be some workaround as the G2 otherwise sounds superior to the Vive Pro Eye or any Pimax with an eye tracking module.

G2 controllers don't seem ideal for it since there's no good way to control gestures, so I'd say Quest 2 is better just for that. Wireless over Virtual Desktop works well enough for VRChat too, so that's a nice bonus as well.

EmuVR hasn't been updated in awhile and only a very few consoles are fully modeled, though you can play anything with a retroarch core even if it doesn't have a modeled console and it'll use a generic console placeholder model.
